This is a recipe i've made for years and years. Whenever one of us is starting to get the sniffles, or is feeling shitty, I make this. It feels like it heals your soul one bowl at a time... I swear this soup could heal a broken heart. Heath has always loved this soup, even since he was a little baby, so its a good one to keep in the bank for kids as well.
I have a few different variations on this, sometimes I add pasta in, usually orecchiette (if your doing this, make sure you add lots of fresh good quality parmesan over the top for extra deliciousness) - or sometimes if Heatho isn't around I add fresh chilli to spice it up a bit, and use onion, capsicum and fresh spinach leaves instead of the other veggies. If someone is sick, I add in massive amounts of fresh ginger and garlic as a flu buster. It depends on your tastes, and what you feel like that day. Any variation has the same base, and regardless is just as delicious.

CHICKEN SOUP RECIPE
INGREDIENTS
1x whole chicken (try and use organic if you can, I know this sounds wanky, and I know they're more expensive, but your literally going to drink a broth made from the chicken, so you dont want any shitty hormones or chemicals in it)
1x whole onion
3/4 x whole carrots
3/4 x whole potatoes
1x cup of peas
1 x bunch of parsley or coriander, whatever you have on hand
3x tablespoons of peppercorns
1x chicken stock (I use 2x cubes this time, but you can use fresh or powdered, again whatever you have on hand)
3x bay leaves
Salt and Pepper, to taste
METHOD
Chop your onion into a few chunks, along with 1 of your carrots. Cut the stalks of your parsley or coriander and dice.
Pop your whole chicken into a pot, along with your onion and 1x carrot, add in your peppercorns, parsley or coriander stalks, bay leaves, chicken stock cubes and a sprinkle or two of salt. Add water to the pot so your chicken is just covered.
Bring to the boil, then turn down and simmer for 2/3 hours - or longer if you wish.
While soup is simmering, peel your potatoes and dice into small chunks, and chop your remaining carrots. Dice up the leaves of your parsley or coriander.
After your broth has been on the simmer for your desired time, remove from the stove and take out your whole chicken, pull off all the chicken meat from the carcass, and discard of the bones etc.
Strain the liquid inside the pot over a bowl and strainer - discard of the strainer contents. Add your liquid back into the pot, along with your chopped potatoes, carrots, peas, herb leaves and pulled chicken meat. Boil until potatoes are cooked.
Serve and enjoy!
