MARS BAR MUFFINS



If it looks like all we do around here is bake muffins, you're right, we dont do much at the moment, and we have been baking a lot of muffins. They are delicious, but my gut will not thank me come end of isolation. Heath and I trotted out these mars bar muffins last week, and we both decided as we scoffed out second muffin in 5 minutes that these were in-fact the best muffins we have ever tasted. They are so delicious you wont be able to stop at one. Perfect for rainy day school holiday baking, now get cooking. xx


MARS BAR MUFFIN RECIPE


Ingredients

  • 200g butter

  • 1 and 1/4 cup brown sugar

  • 265g Mars Bars (5 big mars bars - get 6, because you'll eat one in the car on the way home)

  • 3/4 cup cocoa

  • 3 eggs

  • 1 and 1/4 cup self-raising flour

  • 3/4 cup almond meal

  • 1.5 tsp vanilla extract


Method


Preheat oven to 180 C. Put patty cake pans into 12 small pans

  1. Place butter and sugar into a medium sized saucepan and melt, stirring, over a low heat.

  2. Remove from heat and add 2½ of the chopped Mars bars and cocoa, stir until combined and let mixture cool for 5 minutes.

  3. Whisk in eggs, flour, almond meal and vanilla extract (or use 2 tsp vanilla essence). Drop spoonfuls into muffin pans and place a reserved piece of Mars bar on top of each muffin.

  4. Cook for 30 minutes - (mine usually take a little longer then this) or until muffins are tested when a skewer inserted comes out clean.

  5. Drizzle with caramel sauce and top with some chopped up mars bars (I always buy the Bonne Maman Caramel in a jar, you can find it at woolies where the jams and spreads are, its heaven)

  6. Enjoy warm!!!
