SUNSHINE ON A RAINY DAY - A TROPICANA LADIES LUNCH TO REMEMBER (MANGO AND PASSIONFRUIT MAGARITAS)

Tomorrow is meant to be my hens day. I woke up on Monday to a facebook reminder about it, and I cried for two hours knowing i'd be waking up alone, just to put on another pair of tracksuit pants. Im sad I wont be spending the day drinking my weight in champagne and dancing on tables covered in sparkles with my favourite girlfriends, but I know my time will finally come one day.


All this miserable weather this week didn't help, and it had me dreaming about what could be. If only the sun was shining and I could be drinking cocktails without a care in the world. I miss entertaining my friends, I miss putting special lunches on and I miss sunshine.


So today I thought I would post about a day from my past instead. A ladies lunch to remember if you will. This was back in the Summer of 2017, I put on a special tropicana themed lunch for my girlfriends to mark the end of Summer, and we drank all sorts of cocktails in the sunshine by the pool the entire day.


The menu consisted of charred corn from the BBQ, with lots of chipotle mayo and parmesan grated over the top, fish and pulled beef tacos, and lots of guacamole and tortillas. Simple, summery and delicious.


The decor was bright, fun and festive and put everyone in the mood for an afternoon filled with laughter. I remember making mis match napkins from fun colourful fabrics I found at spotlight that morning, and bringing out all my brightest plates and glassware.


I remember making the most delicious passionfruit and mango margaritas in what was at the time my new fancy margaritas glasses, which I have since made many many times before. The recipe for these can be found below. Next time the sun in shining and you have an afternoon planned with your friends, you should make these, trust me ;)

MANGO AND PASSIONFRUIT MAGARITA RECIPE


INGREDIENTS

  • 300 grams of fresh mango slices

  • 1 ½ cup passion fruit pulp

  • ½ cup fresh lime juice

  • 1 ½ cups of tequila

  • ½ cup of orange liqueur like Cointreau

  • Several cups of ice


METHOD

  • Place the mango slices, passion fruit and lime juice in a blender. Mix until smooth.

  • Add the tequila, orange liqueur, and plenty of ice. Blend until the ice is crushed and smooth, the margarita should have a creamy slushy consistency. Adjust the amount of ice based on the consistency you prefer.

  • Moisten the rims of the glasses with a slice of lime and garnish the rims with sugar or salt according to your preference.

  • Serve the margaritas immediately garnished with fresh passion fruit pulp and/or lime slices.
