
If your ever looking for death by chocolate, this cake will do the trick. I work for the best catering company (not biased, they really are) in Melbourne doing event styling, and for someones birthday a few years ago one of the pastry chefs trotted out this chocolate cake. I almost died and went to heaven then and there in the board room. I insisted he send through the recipe, which he did, and I have banged this cake out so many times since.
Its gluten free, and everyone who eats it has the same reaction, it looks a little something like the below scene from Harry Met Sally.

You have to serve it with cream, and berries - because its deadly rich.

THE WORLDS CHOCOLATIEST FUDGE CAKE

INGREDIENTS
240g) Butter
180g) Dark chocolate
180g) Milk chocolate
290g) Light brown sugar
56mls )Water
5) Eggs- separated
Pinch Salt
Cocoa to dust
METHOD
170°c for 40 mins
160°c for 10-15 mins
1. Melt butter and chocolate over bain marie

2. Put sugar and water in pot- bring to boil

3. Pour sugar mix over melted chocolate
4. Allow to cool slightly, temper in yolks, cool to room temp (Tempered Eggs is simply a process of slowly warming the eggs before introducing them to your recipe so they mix smoothly)
5. Whisk whites with salt to firm peaks

6. Fold whites into chocolate mix

7. Double line tins, once cooked open oven door, allow to cool slightly to decrease sinking in the middle.

Please know, i've cooked this cake dozens of times and the consistency is ALWAYS different. Sometimes i'm impatient with the cooling during making etc and the middle is so unset that its almost runny, if this happens, pop it back in the oven for a bit longer, then pop in the fridge to set and harden up almost like a fudge.
